Vibrant perfumed Chardonnay 

The name Verve encapsulates its style, showing distinctive grapefruit and citrus aromas. The palate is rich due to the intensity of the fruit and the crisp, dry finish lingers on the palate. 

Owned by the Aylward family - founders of the renowned Kooyong winery- Ocean Eight was established in 2004 in the southern and cooler side of Mornington Peninsula. In their state-of-the-art, temperature controlled, gravity fed winery, winemaker Mike Aylward produces stunning cool climate Chardonnay and Pinot Noir, taking influence from the great old world wine regions of Alsace, Burgundy and Champagne. All the grapes for the Ocean Eight wines are sourced from the family’s 17 hectares of vineyards.

The fruit was picked to highlight the citrus spectrum, in particular grapefruit, hence the name ‘Verve’ which accurately describes the racy character of this wine. Whole bunches were chilled overnight prior to vinification in the gravity-fed winery. Then spends 12 months in oak with full lees contact, imparting texture and complexity.

Australia's Mornington Peninsula is just over an hour from Melbourne. It’s surrounded by three bodies of water and ripples with ridges and hills from volcanic activity 60 million years ago. It's said that no vineyard is greater than 7km from the sea in Mornington. 

Pinot Noir and Chardonnay dominate this wine region but you'll also find some wonderfully expressive examples of Shiraz, Cabernet Sauvignon and Pinot Gris. 

With its maritime climate and southern location, the Mornington Peninsula is cooler than most other parts of Australia. There’s often wind and rain during the grape-growing summer months of November and December, which creates perfect conditions for the region’s signature varieties.

The Grape - Chardonnay

The world's most planted white grape variety, Chardonnay is prized for its ability to produce outstanding-quality wines in cool, moderate and warm climates. It is most often used as a single variety in still wines but is equally successful when used in sparkling.

The flavours of Chardonnay are many and varied; they're very much affected by where the grapes are grown, the winemaking process and maturation. 

In cool-climates, such as northern France and England, you would expect flavours of orchard fruits like apples and pears, citrus and wet stones. However, in warm-climates (California, Australia) you'd get peachy flavours, tropical fruits, and sometimes even banana. 

It is common to taste other flavours in Chardonnay, for instance fermenting or ageing in oak gives the wine flavours of vanilla, smoke and toast; the process of malolactic conversion can add creamy, buttery flavours; lees ageing adds body as well as biscuit notes.
