Bodegas Nivarius specialises in the production of white wines from cool-climate vineyards in Rioja. The estate vineyard, which covers 11 hectares, is also a heritage recovery project, which aims to re-establish some of the rarer indigenous white varieties from La Rioja, which have naturally adapted to each terroir. Thus, the Maturana Blanca, a variety that was once practically extinct has become a mainstay, along with old vines of Viura. Nivarius, meaning ‘snow-drift’, takes its name from the common sight of the snowy blanket which covers the vineyards in winter. Based in Nalda, the vineyards are north facing and are situated at 800 metres above sea level, which naturally produces highly aromatic, fresh fruit. Sustainable agricultural practices combined with minimal intervention in the winery, result in inimitable wines full of natural freshness. Chemical sprays are not used, instead organic products are employed to protect the environment and biodiversity of the vineyard. This encourages the best expression of the terroir and a true reflection of the aromas and flavours of the white Rioja grape varieties.

This wine represents the perfect blend of the terroir and the cool-climate region, with its warm days and cool nights prolonging the ripening period and encouraging aromatic richness. The Viura grapes (making up seventy percent of the blend) come from the sandy soils of the Najerilla, and the limestone soils of the Sonsierra. The rest of the blend is made with Maturana Blanca from the Iregua Valley which is grown in sandy soils. Maturana Blanca produces vibrant, tangy wines characterised by high, natural acidity. It is precocious in all stages of development and therefore vigilance is required in the vineyard. All grapes are hand-harvested at optimum ripeness.

The grapes were gently pressed without being destemmed and in a reductive environment; the absence of oxygen reduces the risk of oxidation. Fermentation took place spontaneously with natural yeasts at low temperatures in French oak vats. The wine was matured in French oak vats for nine months, with bâtonnage three times per week, to impart a broader texture to the palate. As a result, the wine shows an aromatic and complex bouquet of baked apple, floral and balsamic notes, layered with nutty tones and a hint of minerality. The palate is fresh, rounded and balanced, with lovely texture and finishes with stone fruits and a touch of almond.
