Francois et Julien Pinon Vouvray Petillant Brut

Made by François and Julien Pinon, whose 37-acre estate was established in 1786 and built up over the last seven generations. The vineyard is situated 5 kilometres north-east of Vouvray, in the Vallée de Cousse. In 1987, François, former child psychologist, took over the family estate from his father. Combining traditional techniques (such as short pruning, working the soil and low yields) with the latest technology, François emphasizes ecologically friendly vineyards and cellar practices. He now works with his son Julien.
This organic NV Vouvray Petillant Brut is 100% Chenin Blanc with vines grown on clay and limestone. Spontaneous fermentation with native yeast that lasts four to six weeks. The wine is then racked into old tonneaux and stainless-steel tanks for two to three months for aging on the fine lees. The wine is then lightly filtered and bottled for its secondary fermentation. The wine averages two years of aging sur lattes with a dosage of six grams. The wine often has a small, discernible amount of residual sugar.
Perfect as an aperitif, or with smoked salmon or a light citrus dessert.
