Collet Chablis Tonnerre

Amazing Premier Cru Chablis. Enjoyable now but also suitable for ageing.

The vines of the Montée de Tonnerre are situated on the right bank of the Serein River close to the Grands Crus and enjoy an optimum South-West exposure. These vineyards stand on white to light-grey soils, not very stony, but with a Kimmeridgian subsoil.

A small terroir but one that produces a high quality of wine. One of the most wanted Premier Cru wine, because it has all the right elements: a mineral as well as a floral side, round with a rich opulence and finesse. The Montée de Tonnerre is more enjoyable over time than in its youth. The winery works under an organic and natural focused philosophy. They avoid using polluting products such as weed killers or herbicides and prefer to work the vines using the mechanical turning of the soil, as well as manual intervention in the vineyards.

Wild yeasts kick off fermentation of this wine to create a unique expression on the terroir. Fermentation and ageing are done in Burgundian oak which will help to impart a more complex and toasty profile to the wine. The wine is aged in oak for sixteen months before bottling. The wine displays the typical hallmarks of a good Chablis, a good balance between ripeness and acidity. On the nose the wine opens to a ripe fruity citrus and floral character. Adding to this the wine has a clean, precise and pure palate. This wine is perfectly paired with high quality fish, shellfish and poultry dishes.
