Vasiliki Akriotou is an oenologist with over 20 years’ experience in the wine industry. In 2015, she created her first range of wines from a micro-winery in the heart of Greece, which reflected her philosophy of winemaking. The vineyards are situated among the snow-capped mountains at altitudes of 280 to 380 metres above sea level. The range includes is Ορειβάτης, which translates as the ‘Mountaineer’ made from Savatiano, which recognises the steep, challenging terrain. This sublime, premium range of wines made from old vines of native grapes, is a true expression of this fresh mountainous
terroir.

Sterea Ellada, located in central Greece, is a diverse and historic wine region that offers a unique blend of terroirs shaped by its varied landscape. The region stretches from mountainous areas to coastal plains, creating a range of microclimates ideal for viticulture. Its climate is predominantly Mediterranean, characterised by hot, dry summers and mild, wet winters, but higher altitudes bring cooler temperatures that help maintain grape acidity and freshness.

The soils in Sterea Ellada vary widely, from sandy and alluvial near the coast to rocky and limestone-rich in the uplands, providing excellent drainage and contributing to the complexity of the wines. Key grape varieties include the indigenous Savatiano, widely planted for its drought resistance and versatility, often used in the production of the famous retsina wines. Additionally, the region cultivates Assyrtiko, known for its crisp acidity and mineral notes, as well as international varieties like Cabernet Sauvignon and Merlot, which are increasingly gaining traction.

Viticultural challenges in Sterea Ellada include managing water stress during the hot summer months and protecting vines from occasional spring frost and hail. The region’s varied terrain also means vineyard work can be labour-intensive, especially on steeper slopes. Despite these obstacles, Sterea Ellada continues to produce wines that reflect its rich history and diverse environments, steadily growing its reputation on the international stage.

Savatiano is one of Greece’s most widely planted and historically significant white grape varieties, particularly dominant in the Attica region near Athens. Traditionally associated with retsina—a resin-flavoured wine—it has undergone a remarkable transformation in recent years, now being vinified into high-quality, terroir-driven wines that showcase its true potential.

Savatiano is well-suited to Greece’s hot, dry climate; it's drought-resistant and thrives in poor, limestone-rich soils, making it ideal for sustainable, dry-farmed viticulture. Its late budding and ripening protect it from spring frosts and allow full phenolic development in the intense Mediterranean sun.

While largely found in central Greece, small plantings also exist in other parts of the country and in Greek diaspora vineyards abroad, though international cultivation remains limited.

Modern expressions of Savatiano are typically unoaked or lightly oaked, allowing the grape’s subtle charm to shine. It produces medium-bodied wines with moderate acidity and flavours of ripe stone fruit, citrus, melon, and occasionally herbal or nutty undertones. Older vines and skilled winemaking can yield wines with surprising complexity, texture, and ageing potential.

Savatiano is a symbol of Greek wine’s evolution—once humble, now refined—offering refreshing whites that pair beautifully with Mediterranean cuisine and warm-weather sipping.
