The Sibiliana 'Sensale' range offer fantastic value for a mid-week treat. Roceno Grillo, characterized by its straw-yellow colour, is delicate and elegant, with white peach and yellow melon aromas. Excellent value.

The Sibiliana/Cantine Europa co-operative have more than 4500 hectares of productive land in Sicily with grapevines located across the provinces of Trapani, Agrigento,  and Palermo. As an established winery in Sicily, Sibiliana Vini uses the latest in modern winemaking technology to produce this range of wines from indigenous Sicilian grapes. The three quality levels of Grillo and Nero d'Avola show the grapes in increasing levels of complexity. The Sibiliana 'Sensale' range of wines are full of Sicilian character and offer fantastic value. 

The naming of the brand refers to the Sibiliana Tower, a symbolic building of the city of Petrosino and the whole area coast between Marsala and Mazara del Vallo. The Sibiliana Tower had a lantern inside it, useful for fishing boats to direct them to the coast. Today as it was then, the value of the Sibiliana lantern remains, they are committed to illuminating and researching the best the area has to offer from a winemaking perspective.

The Grillo grape post hand-harvesting is taken, rapidly, to the winery and pressed gently (under one BAR of pressure at most) and then immediately refrigerated at 16°C. The high-quality work   is prepared for the fermentation with the selected yeast at a temperature of 16°-18°c. It is aged for a short time in a stainless steel, at a controlled temperature, before bottling.

What is organic wine?

Organic wine is wine made from grapes grown in accordance with the principles of organic farming. This excludes the use of artificial chemical fertilizers, pesticides, fungicides and herbicides. 

Previously, “Made with Organically Grown Grapes” was legally the only claim possible, but regulations introduced in 2012 now allow the whole winemaking process, from harvest to bottle, to be certified by law.

The definition does still vary from country to country though. In the US, no additional sulfites may be added to any organic product, including wine. In the EU, added sulfites are allowed, though there are limits on how much. Most other wine-producing countries do not have their own standards for organic wine and observe the standards of the nation importing the wine.
