The Christoph Bauer winery stands for handcrafted wines with a clear varietal and vintage character. Conscious work in the vineyard is a prerequisite: the family has been cultivating its vineyards organically since 2015.

Ripe grapes and careful processing are the basis for Christoph Bauer's wines. The winemaker has been impressing with characteristic white and red wines for years. The fact that both are possible at a high level is due to the unique vineyards: Jetzelsdorf near Haugsdorf offers very good sites and soils for white wines on the one hand, and warm basin sites on the other, where red varieties ripen optimally.

The Weinviertel, Austria’s largest wine-growing region, lies in the northeast of Lower Austria, bordering the Czech Republic and Slovakia. Its name translates as “wine quarter”, a fitting title given the extensive vineyard landscape. The climate is continental, with warm, dry summers and cold winters, but is softened by Pannonian influences from the east, creating favourable ripening conditions while retaining freshness.

Soils are diverse, ranging from loess and loam to gravel and sandstone, often interspersed with marl and clay. This variety allows for nuanced expressions of different grape varieties, though Grüner Veltliner is by far the star. The region was the first in Austria to achieve DAC (Districtus Austriae Controllatus) status in 2003, reserved for its classic, peppery Grüner Veltliner.

Grüner Veltliner from the Weinviertel is typically fresh and aromatic, with lively acidity, pronounced white pepper spice, citrus, green apple and herbal notes. Lighter styles are crisp and vibrant, while Reserve wines offer more body, ripe stone fruit, and subtle oak complexity. Other grapes, such as Riesling, Welschriesling and Pinot varieties, are also grown, alongside some red wines from Zweigelt and Blauer Portugieser. Overall, Weinviertel wines are characterised by clarity, precision and a distinctive peppery freshness that captures the region’s unique terroir.

Grüner Veltliner is Austria’s flagship white grape variety, prized for its versatility, vibrant acidity, and distinctive flavour profile. Thought to have originated in Austria, it thrives particularly well in regions like Wachau, Kamptal, and Kremstal, where it benefits from a continental climate with warm days and cool nights, ideal for preserving acidity and aromatic freshness.

Viticulturally, Grüner Veltliner is a mid-ripening grape that performs well on a variety of soils, especially loess and primary rock. It tends to yield generously but requires careful vineyard management to achieve concentration and balance.

Outside Austria, it has found success in countries like Hungary, Slovakia, the Czech Republic, and increasingly in New World regions such as New Zealand, Australia, and the United States—particularly in cooler sites like Oregon and California’s Sonoma Coast.

Grüner Veltliner is known for its food-friendly character and diverse styles. Young, fresh expressions display crisp acidity and flavours of green apple, lime, white pepper, and radish. More serious, age-worthy versions—often from top single vineyards—can be richer and more textured, showing stone fruit, spice, and a distinctive minerality.

Whether light and zesty or complex and structured, Grüner Veltliner offers a uniquely expressive white wine that pairs beautifully with a wide range of cuisines.
