A new project within Sardinia, Saraja is a collaboration between five highly experienced and respected winemakers.
A winemaking Supergroup, if you will. This is classic Sardinian Vermentino, from a stunning single vineyard grown at higher altitude (400-500m above sea level). The vines here are more mature and lower yielding, giving a wine with breadth, concentration and complexity.
The vines are Guyot-trellised and grow south-facing, at 400-500m altitude. The soil is a combination of sand, loam, clay and quartz. The 100% Vermentino grapes are hand-harvested towards the middle of September. After destemming and soft pressing at low temperatures, the wine is fermented in stainless steel over a period of 15 days. The wine spends 6 to 8 months on fine lees, and a further 2 months in bottle before release.
Fresh and vibrant with a zesty character, its floral aromas are beautifully complemented by Mediterranean herbs. The palate is focused and textural with ripe, honeyed apricot and pineapple, offset by a silky, saline minerality.
