The Pinot Noir is sourced from several locations across the Great Southern sub-region. The fruit was fermented through a combination of wild and selected yeasts. It is then aged in French oak for six months before bottling, this helps to soften the high acidity of the Pinot Noir while imparting a delicate secondary character that is balanced with the primary fruity profile of the wine. On the nose, there is a balance of black cherries, minerality and a subtle graphite note. With additional hints of lipstick and leather. There is a slight spicy note from the oak, that adds complexity and character to the wine. On the palate the wine has a silky softness with a pleasant ripeness of fruit and satisfying length.
