Caiaffa Nero di Troia

Caiaffa are a family-owned winery in the heart of Italy. Known for their traditional winemaking techniques, they have been crafting wines for several generations, focusing on local grape varieties that highlight the Puglian region they come from.

The current winemaker, Marco Caiaffa, combines his family's heritage with modern practices to enhance quality while respecting tradition. The winery produces a range of wines, including robust reds and crisp whites, all made with minimal intervention. Caiaffa are dedicated to sustainability, employing organic farming methods to ensure the health of the vineyards and the environment.

Caiaffa Nero di Troia is deep ruby colour, indicative of its rich fruit content. On the nose, it offers a complex bouquet with notes of dark cherries, plums, and subtle hints of black pepper and herbs, reflecting the Mediterranean climate of its origin.

The flavour profile is robust yet balanced, with ripe black fruit flavours dominating the palate, alongside earthy minerals and a touch of spice. The tannins are present but well-integrated and the acidity is moderate.

Fermentation occurs in stainless steel tanks, allowing for the preservation of the grape's natural flavours. The wine is then aged in a combination of oak barrels and stainless steel, which helps to develop its complexity while maintaining the varietal characteristics of Nero di Troia.

A deep Italian red, pair it with hearty dishes such as grilled meats, rich pasta sauces, or aged cheeses.
