Tequila and Mezcal, Mexico's traditional agave spirits are intrinsically vegetal, earthy and grassy. Mezcal refers to any agave spirit, and differs in style from region to region, in much the same way as Scotch Whisky, with Tequila coming specifically from around that region, and made specifically from steamed local blue agave. Mezcal's very particular flavour comes mainly from the agave hearts being roasted in pits, leading to aromas not dissimilar from Islay's peated malts.
