The Maipo valley in central Chile is the country's winemaking HQ. Perfectly suited to grape varieties in need of warmth, with the option to plant closer to the Andes mountains to the east or the coast to the west, this area produces some of the most famous wines in Chile. Indomita's Cabernet Sauvignon is grown here but then driven to their winery in Casablanca, west of Santiago and closer to the sea. The wine is aged in a mix of new and old, French and American oak barrels for 12 months.
