Towards the furthest southern tip of South Africa lies the small Elim wine region, with some of the coldest weather in the country. This climate is perfect for Sauvignon Blanc, here fermented in French oak barrels with wild yeasts. This spontaneous fermentation adds a smoky depth to the finished wine, with a ripe pear and quince character.
