Nutty, tangy Amontillado.
Amontillado starts its life as Fino sherry, aged under a layer of yeast which protects the wine from oxidisation. After three years, the sherry is taken out and moved into a different barrel without this protective layer. The wine subsequently oxidises, gaining a nutty character in addition to the tangy flavours of traditional Fino.
