Billecart-Salmon Brut Sous Bois

The term "Sous Bois" literally means under oak and this unique cuvee is entirely vinified in oak. Made from three classic champagne grapes Chardonnay, Pinot Meunier and Pinot noir and coming mainly from Premier Cru and Grand Cru sites across the region. The wine is fermented and aged in old oak casks for 3-4 months before spending a further 6 years ageing on the lees in bottle. There is a fine elegance to this Champagne and a strength of character from its wine making process.
