Bernard Defaix Sauvignon de Saint Bris
Paradoxical Sauvignon Blanc from Burgundy.
The only part of Burgundy permitted to grow Sauvignon Blanc, more famous in the Loire valley, is St Bris, just a little bit south east of Chablis. To be fair, this far north in Burgundy is virtually on the same latitude as the villages of Sancerre and Pouilly-sur-Loire so well known for Sauvignon Blanc, so it's not too extreme an idea. This is made by Didier Defaix, who makes classic Chablis and Bourgogne Blanc from a range of vineyards, mostly using stainless steel to make his wines, which suits this wonderfully aromatic Sauvignon down to the ground.
