Albury Estate is based on the chalk sub-soils of the North Downs in Surrey, farming the vines for this wine according to biodynamic principles. This is certainly one of the most intriguing, different, complex sparkling wines being produced in England. The wine has been fermented with wild yeast, rather than by innoculation, which instills in the wine a spicy, smoky, tangy character, balanced by the now classic English Chardonnay fruit aromas of citrus and apple. Four years of bottle ageing on the lees has added a dusty hazlenut note, all of which combined suggests this is a sparkling wine for food, for further ageing and quite likely decanting.
